Barbecue beef steak has always been one of those dishes I just had to get right. I grew up loving my mom’s incredible baked beef strips with peppers (that recipe’s still in the vault for now 😉), but somewhere along the way, I found myself drawn to the smoky-sweet flavor of a good barbecue-style steak. There wasn’t any big reason, maybe it was the flavor, or maybe I just liked the drama of it. After a few trial runs and tweaks, I landed on a version that hits all the right notes: flavorful, juicy, and easy to adjust based on how much spice your audience can handle (sometimes it’s a group decision 😅).

 

This steak has earned its place on my “must-make” list, especially for dinners where beef is the star. Pair it with my creamy mashed potatoes to cool the heat, or go full throttle with my herbed and spiced mash.     This steak takes a little prep, but trust me, it’s 100% worth it. The key to soft, juicy beef that packs a punch of flavor lies in how you slice, tenderize, and marinate. So take your time with each step, and get ready for a crowd-pleasing main!

    Step1

    Slice the beef: Lightly rinse the beef and pat it dry. Identify the grain (the direction of the muscle fibers) and slice the beef against the grain. This ensures the meat stays tender after cooking.

    Tenderize the slices: Place the slices on a clean surface and gently pound each one using a cooking mallet. No mallet? A hammer works in a pinch, just be careful not to go overboard and tear the meat.

    Set the beef aside: Transfer the tenderized slices into a large mixing bowl and keep them aside while you prepare the marinade.

    Make the flavor base: In a blender or mixie, combine the sugar, salt, pepper, basil, oregano, chili flakes, chili powder, onion, garlic, and lemon juice. Blend until you get a smooth, fine paste.

    Prepare the marinade: In a separate bowl, mix together the blended spice paste, barbecue sauce, wine, olive oil, and Worcestershire sauce. Stir well to form a rich, flavorful marinade.

    Marinate the meat: Pour the marinade over the beef slices and use your hands to coat every piece thoroughly. Cover and let it sit for about 2 hours, then refrigerate overnight. In a rush? Let it sit for at least 4 hours if you're planning to cook it the same day.

    Bring to room temperature: When ready to cook, take the beef out of the fridge and let it come to room temperature. Give it a quick mix to make sure the marinade is evenly distributed.

    Bake to perfection: Preheat your oven to 360°F (Gas Mark 4). Arrange the marinated beef slices in a single layer on a baking tray. It’s okay if they touch slightly—they’ll shrink as they cook. Bake for 40 minutes, then flip the slices and bake for another 10 minutes until done.

    Grilling or barbecuing option: Place the slices on the grill and baste with oil. Cook for 20–30 minutes on one side, then flip, baste again, and cook for another 20–30 minutes. Keep basting occasionally so the meat stays juicy and doesn’t dry out.
